Vegan Zucchini Cake/Cupcakes
My mom, being the sweetheart that she is, found this recipe for me when we first started eating vegan food. Since then she has made it at every family event just so we can have dessert to eat and we couldn't be happier to eat it! It started out being called a Luscious Devil's Food Cake Recipe and after I experimented a bit, i've found that its even more tasty if you add zucchini to it. I will post the recipe below and tell you how I have modified it. You can feel free to modify it or even make it as its original recipe. Either way its very yummy!
Luscious Devil's Food Cake
- 3 c. sifted flour
- 2 c. sugar
- 2 t. baking soda
- 1 t. salt
- 6 T. cocoa(can be left out to make white cake)
- 3/4 c.vegetable oil
- 2 T. white vinegar
- 2 c. lukewarm water
- 2 t. vanilla
Add 1-2 cups of zucchini to make it into zucchini cake and I will sometimes add chocolate chips into batter or sprinkle them on top
Sift dry ingredients into a mixing bowl. Add remaining ingredients and mix thoroughly. Pour batter into greased and floured cake pan. Bake at 375 degrees for 30 minutes.
To make into cupcakes pour about 1/2 cup of batter into each cupcake holder. Cupcakes are usually so moist coming out that I don't use cupcake liners but you can if you'd like. Bake cupcakes at same temperature and for same time.
